The bottom half of the melon was being supported on all side, and the pressure was greatest in the middle. The force took the path of least resistance. (that being the top half which was under no compression force)

with the steam it seems more like the watermelon somehow withstood enough mechanical pressure to boil from the inside and explode from the top, otherwise the bottom would've been crushed because it's too rigid to behave the way you're describing it
